Description
A refreshing low-calorie drink made from adzuki beans, believed to aid digestion and appetite control.
Ingredients

- 1/2 cup dry adzuki beans
- 4 cups water
- 1 teaspoon grated ginger (optional)
- 1 strip lemon peel (optional)
- 1 teaspoon honey or stevia (optional)
Instructions
- Rinse the beans: Place 1/2 cup of adzuki beans in a fine-mesh sieve and rinse under cold water until the rinse runs clear.
- Soak the beans (optional): Soak the beans in water for 30 minutes to 2 hours, then drain.
- Simmer the beans: Put the rinsed beans in a saucepan with 4 cups of water and bring to a gentle boil, then reduce to a low simmer. Let simmer for 30 to 40 minutes.
- Add aromatics: In the last 5 minutes of simmering, add ginger or lemon peel if using.
- Strain and cool: Pour the mixture through a fine sieve or cheesecloth into a heatproof container.
- Store: Keep refrigerated in a sealed jar for up to 3 days.
