Description

A light, creamy dessert made with sugar-free gelatin and Greek yogurt, perfect for those managing calories and sweet cravings.


Ingredients

  • 12 packets sugar-free flavored gelatin
  • 1 cup hot water
  • 1 cup cold water or ice
  • 1 cup nonfat Greek yogurt or low-fat cottage cheese, well-blended
  • 1/2 cup whipped topping alternative or light whipped cream
  • 1/2 cup fresh or thawed fruit (optional)
  • 1 scoop optional protein powder

Instructions

  1. Pour 1 cup hot water over the sugar-free gelatin in a bowl and whisk until completely dissolved, about 1 to 2 minutes.
  2. Stir in 1 cup cold water or ice until the mixture cools to room temperature, about 2 minutes.
  3. Beat the Greek yogurt or blended cottage cheese until smooth and slightly aerated, about 1 minute.
  4. Slowly pour the cooled gelatin into the creamy base while whisking continuously for 1 to 2 minutes until homogeneous.
  5. Gently fold the whipped topping alternative into the mixture until just combined, about 20 to 30 seconds.
  6. Fold in small pieces of fruit if using and transfer to serving dishes.
  7. Refrigerate for at least 30 minutes to set before serving.
  8. Scoop into small bowls and enjoy chilled.

Notes

Serve chilled and adjust sweetness to taste. It can be stored in the refrigerator for up to 3 days.
