  • 23 Fresh Lemons (about ½ cup of juice)
  • 1 packet unflavored Gelatin (about 2 ½ teaspoons)
  • 1 cup Water
  • Optional: Sweetener (like honey or stevia)

Instructions

  1. Gather fresh lemons, unflavored gelatin, and water.
  2. Squeeze the juice from the lemons until you have about ½ cup of juice.
  3. In a small bowl, sprinkle the gelatin over ½ cup of cold water. Stir gently and let it sit for about 5 minutes to bloom.
  4. In a saucepan, bring 1 cup of water to a gentle boil and remove from heat.
  5. Once the water has cooled slightly, whisk in the bloomed gelatin until fully dissolved, then add the lemon juice.
  6. Pour the mixture into a serving pitcher or individual glasses and refrigerate for at least 1-2 hours (or until set).
  7. Serve over ice or enjoy as is.
